Oysters

Ingredients

Scale 1x 2x 3x 12 to 24 fresh oysters in their shells 1/2 cup water Optional: 1/2 cup unsalted butter Optional: 1 clove garlic, minced Optional: 1 tablespoon fresh lemon juice Optional: 1/2 cup soy sauce Optional: 2 teaspoons sesame oil Optional: 1 tablespoon brown sugar Optional: 2 tablespoons chopped scallions Fresh lemon wedges for serving Fresh herbs for garnish (optional)

Instructions

Scrub oysters thoroughly under cold running water, discarding any that stay open. Fill a large pot with 1/2 cup water and place a steaming rack or basket inside. Bring water to a gentle boil over medium-high heat with the lid on. Arrange oysters cup-side down on the steaming rack in a single layer. Cover and steam for 4–6 minutes, until shells open slightly and edges curl. Use tongs to transfer hot oysters to a platter. Discard any oysters that remain closed. Serve immediately with lemon, garlic butter, or your favorite sauce.
